This delightful Barilla Conchiglie Summer Pasta Salad recipe by Pina Bresciani of @pinabresciani combines rich flavours and textures in a simple meal. Perfectly al dente Barilla Conchiglie pasta is mixed with salty prosciutto, arugula, sweet tomatoes, fresh bocconcini mozzarella and toasted sunflower seeds—all meant to make you close your eyes and picture yourself enjoying it an Italian piazza!
Ingredients
Serves 4
1 box | Barilla Conchiglie/Medium Shells pasta |
1 tbsp | extra virgin olive oil |
1/4 cup | pesto (homemade or store bought) |
3/4 cup | prosciutto, sliced thick and cut into small slices |
1/2 cup | kalamata olives, pitted |
1/2 cup | bocconcini mozzarella, quartered |
1/2 cup | cherry tomatoes, quartered |
1 1/2 cups | arugula |
1/4 cup | sunflower seeds, toasted |
To taste | salt |

Method
Step 1
Bring a large pot of water to boil. Once boiling, salt the water, and add Barilla Conchiglie pasta. Cook until al dente.
Step 2
Drain the Barilla Conchiglie pasta and drizzle with olive oil so it doesn’t stick together. Let the pasta cool completely, for at least 1 hour.
Step 3
Once Barilla Conchiglie pasta is cooled, place it in a large bowl. Add the pesto and stir.
Step 4
Add the prosciutto, olives, bocconcini, cherry tomatoes, arugula and toasted sunflower seeds.
Step 5
Stir once more until combined.
Step 6
Serve straight away or keep in the fridge for 1-2 days.
