1 boxBarilla Gemelli pasta

1/2 cupShallot and Chives Boursin Cuisine

2 cansRio Mare tuna

5 tbspolive oil, divided

2/3 cupred onion, diced

3 tbsplemon juice

2/3 cuphot house cucumber, peeled, seeded and diced

2/3 cupcarrot, diced

1 tbspItalian parsley, chopped

To tasteSalt and black pepper

Method

Step 1

Cook Barilla Gemelli pasta according to directions, drain one minute early and drizzle with 1 tbsp olive oil. Spread out flat on a sheet pan to cool.

Step 2

Meanwhile, sauté the onion with 1 tbsp of olive oil for three minutes, set aside.

Step 3

In a bowl, whisk the Boursin cheese with remaining olive oil and the lemon juice.

Step 4

Stir in pasta and mix well. Add all the vegetables, drained tuna and parsley, season with salt and pepper and mix well before serving.
