Ingredients

Serves 8

1 Box Barilla Pastina (340g)
½ C. Extra Virgin Olive oil
1 English Cucumber, small diced
1/2 cup Shallots, diced
1/2 C. Parsley, chopped
2 tbsp Mint, chopped
1 can Diced tomatoes 500g
3 Diced Plum tomatoes
¼ C. Lemon juice
to taste Sea salt & Black pepper

Method

Tip

If preparing in advance at home, no need to pre-cook the pastina. Just allow it to rest with all the ingredients in the fridge overnight and it will absorb all the juices from the tomatoes, cucumber, lemon juice and olive oil.

Step 1

Bring a pot of water to a boil. Cook pastina for 3 minutes, drain well, and place on a sheet tray with a drizzle of olive oil to cool.

Step 2

Meanwhile, place remaining ingredients in a bowl and mix.

Step 3

Return pastina to the bowl and mix well.

Step 4

Adjust seasonings and reserve several hours before serving.
