This simple pasta salad features a few star ingredients—creamy avocado, fresh and fragrant basil, fresh bocconcini, and high-quality al dente Barilla Rotini pasta—to make it the perfect pasta salad recipe, no matter what you need.

1 box Barilla Rotini pasta
4 tbsp extra virgin olive oil, divided
2 tbsp lemon juice
2 ripe avocados
1 fresh mozzarella or 250g bocconcini cheese
2 pts cherry tomatoes, halved
1 cup fresh basil, sliced
To taste salt and black pepper

Method

Chef's tip

This recipe can also be made using Barilla Farfalle, Macaroni, or Penne pasta.

Step 1

Cook Barilla Rotini pasta until al dente according to packaging directions but drain 1 minute early. Drizzle with 1 tbsp olive oil. Place flat on a sheet pan, cool down.

Step 2

In a big bowl, add the cooled Barilla Rotini pasta, diced avocado, diced mozzarella or bocconcini, halved cherry tomatoes and chopped basil.

Step 3

Add the dressing: mix 3 tbsp olive oil, 2 tbsp lemon juice, salt and pepper. Mix gently and serve.
