Barilla Capellini Pasta with Mussels in Chipotle Sauce

Ingredients

Serves 8

1 box Barilla Capellini pasta
2 tbsp butter
Fresh mussels
1 7-oz can chipotle
1 cup half and half cream
3 garlic cloves, chopped
2 shallot cloves, chopped
To taste salt

Method

Step 1

Bring a large pot of water to a boil.

Step 2

In a large saucepan, add the butter and melt on low heat. Add in the shallots and oncethey turn translucent add mussels and 1 tbsp of chipotle. Cover and simmer on low heat until the mussles open.

Step 3

Remove opened mussles and set aside. Remove unopened mussels, which may not be fresh.

Step 4

Add half and half cream to the saucepan, and whisk until the mixture thickens.

Step 5

Cook the Barilla Capellini pasta according to package directions; drain.

Step 6

Add Barilla Capellini pasta to the chipotle sauce; do not let it dry.

Step 7

Take the mussels out of their shell and add into Barilla Capellini pasta and sauce.

Step 8

Top with 4 additional mussels and serve.
