Ingredients
Serves 6
1 box | Barilla Rotini pasta |
1 cup | cherry tomatoes, halved |
1/2 cup | red onion, thinly sliced |
1/2 cup | cucumber, diced |
1/2 cup | black olives, chopped |
1/4 cup | light feta, crumbled |
1/3 cup | parsley, chopped |
To taste | salt and pepper |
For Greek salad dressing
1/3 cup | extra virgin olive oil |
1/3 cup | red wine vinegar |
2 tsp | dried oregano |
2 tsp | Dijon mustard |
1 tsp | garlic, minced |

Method
Step 1
Cook Barilla Rotini pasta for 7 minutes, until al dente.
Step 2
Once pasta is strained and cooled, pour into a mixing bowl. Add cherry tomatoes, red onion, cucumber, black olives and mix together. Add in feta and parsley, and mix together.
Step 3
Meanwhile, in a separate small bowl, mix together all of the ingredients for the Greek salad dressing and pour on top of the pasta.
Step 4
Mix together until all pasta is evenly coated with the dressing. Add salt and pepper to taste.
