Mediterranean Barilla Cellentani Pasta Salad

This Mediterranean Cellentani Pasta Salad recipe is the perfect dish to impress at your next summer dinner party

Inspired by the Mediterranean Diet, this Barilla Cellentani Pasta Salad from Laura Beaule of @dashofhoney,  is  not only beautiful, but also loaded with deliciousness from the fresh vegetables, prosciutto and bocconcini cheese. It’s perfect for a main meal or as a side dish.

Ingredients

Serves 8

1 box Barilla Cellentani pasta
200 g prosciutto slices
1 package (200g) mini bocconcini (approximately 1 cup)
1 cup sun-dried tomatoes, sliced
1 cup Kalamata olives, roughly chopped
3 mini cucumbers, cubed
3 small shallots, chopped
3 handfuls arugula

For dressing

2/3 cup olive oil
1/3 cup white balsamic vinegar
1 tbsp Dijon mustard
1 tbsp honey
1 garlic clove, minced
4 tbsp chopped fresh basil
1 1/2 tsp salt

Method

Step 1

Cook the Barilla Cellentani pasta according to package instructions. Drain and let the pasta cool down completely.

Step 2

Preheat the oven to 375°F. Lay parchment paper on a baking pan and arrange the prosciutto slices on it. Bake for 12-15 minutes until crispy. Let it cool down and break into small pieces with your hands.

Step 3

Prepare the dressing by combining all the ingredients together in a mason jar: olive oil, white balsamic vinegar, dijon mustard, honey, garlic, basil and salt. Close with the lid and shake well to mix.

Step 4

In a big bowl, combine the cooled pasta, mini bocconcini, sundried tomatoes, Kalamata olives, cucumbers, shallots, arugula and the prosciutto chips.

Step 5

Pour the dressing over the pasta salad and mix well.
