1 box Barilla Gemelli pasta
4 tbsp olive oil
1 tbsp white balsamic vinegar
1 lb strawberries, quartered
1 cup bocconcini, halved
1 cup basil, julienned
1 rip avocado, diced
To taste salt and pepper
Optional toasted pine nuts for garnish

Method

Step 1

Place a pot of water to boil, cook Barilla Gemelli pasta according to directions but drain 1 minute sort. Drizzle with 1 tbsp olive oil, place flat on a sheet tray and let cool down to room temperature.

Step 2

Meanwhile whisk white balsamic vinegar with remaining olive oil, season with salt and pepper and set aside.

Step 3

Cut the bocconcini cheese, strawberries, avocado and basil.

Step 4

Place pasta in a large bowl. Add in bocconcini cheese, strawberries, avocado and basil. Add dressing. Mix all together and serve.
