4 tbsp. | Extra virgin olive oil |
3 tbsp. | red wine vinegar |
2 | zucchini, cut into 1 inch pieces |
1 | red onion, cut into inch pieces |
1 | eggplant, cut into inch pieces |
1 pint | grape tomatoes, burst on a grill |
1 cup | crumbled feta cheese |
1 tbsp. | fresh oregano leaves |

Method
Step 1
Grill zucchini, red onion & eggplant, then chop. Set aside.
Step 2
Bring a large pot of water to boil.
Step 3
Cook pasta according to package directions.
Step 4
Meanwhile, toss all vegetables with oil, vinegar, salt pepper and oregano.
Step 5
Drain pasta, mix with grilled vegetables then top with feta cheese.
Step 6
Serve immediately, do not chill.
