1 | Pint Yellow Cherry Tomatoes, Quartered |
2 | Pints Red Cherry Tomatoes, Quartered |
To Taste | Sea Salt and Black Pepper |
6 | Tablespoons Extra Virgin Olive Oil |
1 | Clove Garlic, Minced |
10 | Basil Leaves, Cut Julienne |
¾ | Cup Ricotta Salata Cheese, Shredded |

Method
Step 1
Bring a large pot of water to boil.
Step 2
In a large bowl, add tomatoes, salt, pepper, olive oil, garlic and basil.
Step 3
Let marinate ½ hour.
Step 4
Meanwhile cook pasta according to package directions.
Step 5
Drain pasta and toss into tomato mixture.
Step 6
Finish with cheese on top and serve.
