Ingredients

4 | Artichokes Sliced |
6 | Slices Fresh Lemons |
1/4 | Cup Extra Virgin Olive Oil |
1 | Clove Garlic, Chopped |
3 | Tablespoons Fresh Parsley, Chopped |
1 | Cup Chicken Broth |
3/4 | Cup, Breadcrumbs |
1/4 | Cup Pine Nuts |
1/2 | Cup Romano Cheese, Grated |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Peel artichokes and clean out the center. Cut in half and then dice. Place diced artichoke pieces into a large bowl filled with water and lemon slices to prevent discoloring.
Step 3
Sauté garlic in olive oil in a large skillet over medium heat until garlic is slightly yellow.
Step 4
Add artichokes to the skillet and sauté until cooked thoroughly.
Step 5
Add parsley and chicken broth. Continue cooking until liquid is reduced by half.
Step 6
Toast breadcrumbs and pine nuts in a separate dry skillet over medium heat. Mix in grated cheese.
Step 7
Cook pasta according to package directions. Drain and toss with artichokes. Top with breadcrumb and pine nut mixture.
