Chicken Caesar Cellentani Pasta Salad

Caesar salad dressing is delicious because it’s salty, cheesy, has umami, and a tiny bit of heat from the mustard. This recipe takes those classic elements of a beloved Caesar salad recipe and adds tender juicy chicken and al dente Barilla® Cellentani pasta.

3 | Anchovy fillets, chopped |
1 | Egg yolk |
1 | Clove garlic, finely grated |
2 | Teaspoons Dijon mustard |
2 | Teaspoons white wine vinegar |
7 | Tablespoons vegetable oil, divided |
2 | Tablespoons water |
2 | Ounces Parmesan cheese, freshly grated |
1 | Ounce Parmesan cheese, shaved |
2 | Ounces cubed pancetta, divided |
6 | Ounces iceberg lettuce, roughly torn |
9 | Ounces roasted chicken, roughly chopped |
To Taste | Sea salt and freshly ground black pepper |

Method
Step 1
Bring a large pot of water to a boil; cook pasta according to package directions and drain well. Lay flat on a sheet tray, drizzle with 1 tablespoon oil and set aside to cool.
Step 2
Place the anchovy, egg yolk, garlic, mustard, and white wine vinegar into a food processer with half the oil and blitz until combined.
Step 3
While the food processer is still running, slowly add the water and the remaining oil.
Step 4
Add grated Parmesan and blitz until combined and a smooth dressing is formed.
Step 5
Toss the pasta with half the dressing, until fully coated.
Step 6
Heat a skillet until hot, add pancetta and fry for 3-4 minutes until golden and cooked through.
Step 7
Add chicken, lettuce and 2/3 of the pancetta to the pasta and toss to combine.
Step 8
Divide between serving plates, drizzle with a little more dressing, the rest of the pancetta and the shaved Parmesan.
