This easy pesto tortellini recipe uses Barilla Three Cheese Tortellini and Rustic Basil Pesto.

1Jar Barilla^® Rustic Basil Pesto

1Tablespoon extra virgin olive oil

206-inch skewers

1Pound m oz. arella cheese pearls

1Pint yellow cherry tomatoes

1Pint red cherry tomatoes

5basil leaves, sliced thin

To TasteSalt and black pepper

Method

Step 1

Bring a large pot of water to a boil and cook tortellini 1 minute less than package directions.

Step 2

Drain and toss with olive oil. Place on a cookie sheet to cool down.

Step 3

Once the pasta is cool build the skewers. First add one tortellini, then top with red cherry tomato, then mozzarella, then another tortellini, then yellow cherry tomato and then another tortellini.

Step 4

Place onto a platter and drizzle with pesto. Garnish with basil and serve!
