Ingredients

Serves 6

1 Box Barilla® Collezione Bucatini
4 Tablespoons extra virgin olive oil
4 Ounces Pancetta sliced thin and rendered
2 Cups fresh peas shelled
½ Cup Pecorino Romano cheese grated
To taste Salt and black pepper

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Meanwhile in a large skillet sauté pancetta in olive oil for 2-3 minutes until crispy.

Step 3

Add peas and sauté for 2 minutes; season with salt and pepper.

Step 4

Cook pasta 1 minute less than package directions.

Step 5

Drain pasta reserving 1 cup of pasta cooking water, set aside.

Step 6

Add pasta to the pea sauce then add the cooking water and bring the sauce to a simmer.

Step 7

Let most of the water reduce then remove the skillet from the heat.

Step 8

Fold in cheese until the sauce is creamy and well incorporated with the pasta.
