Barilla® Collezione Penne with Alfredo Sauce, Spinach & Mushrooms

Ingredients

Serves 8

1 Box Barilla® Collezione Penne
2 Tablespoons extra virgin olive oil
1 Onion, small diced
1 Pound mixed mushrooms, sliced
2 Cups baby spinach
To taste Salt and black pepper
½ Cup Parmigiano-Reggiano cheese, grated
Alfredo sauce
1 Cup Heavy cream
1 Cup Whole milk
1 tsp Garlic powder
2 tsp Corn starch
2 tbs Water
½ Cup, grated Parmigiano
To taste Salt

Method

Step 1

Bring milk and cream to simmer, lower the heat and add garlic powder. Meanwhile dilute corn starch with water, add to the sauce along with salt, whisk well and simmer for two minutes. Turn off heat, stir in cheese.

Step 2

Bring a large pot of water to a boil.

Step 3

Meanwhile in a large skillet sauté onion in olive oil for 2-3 minutes or until slightly golden in color.

Step 4

Add mushrooms and sauté for 5 minutes, season with salt and pepper.

Step 5

Cook pasta according to package directions and drain.

Step 6

Toss pasta with sauce, spinach and cheese.
