Ingredients: 1 Box Barilla® Collezione Penne; 2 tablespoons Extra Virgin Olive Oil; 1 Onion, small diced; 1 Pound mixed mushrooms, sliced; 2 Cups Baby Spinach; To taste Salt and black pepper; ½ Cup Parmigiano-Reggiano cheese, grated; Alfredo sauce; 1 Cup heavy cream; 1 Cup whole milk; 1 tsp Garlic powder; 2 tsp Corn starch; 2 tbs Water; ½ Cup, grated Parmigiano; To taste Salt

Ingredients

1Box Barilla^® Collezione Penne

2tablespoons Extra Virgin Olive Oil

1Onion, small diced

1Pound mixed mushrooms, sliced

2Cups Baby Spinach

To tasteSalt and black pepper

½Cup Parmigiano-Reggiano cheese, grated

Alfredo sauce

1Cup heavy cream

1Cup whole milk

1tsp Garlic powder

2tsp Corn starch

2tbs Water

½Cup, grated Parmigiano

To tasteSalt

Method

Step 1

Bring milk and cream to simmer, lower the heat and add garlic powder. Meanwhile dilute corn starch with water, add to the sauce along with salt, whisk well and simmer for two minutes. Turn off heat, stir in cheese.

Step 2

Bring a large pot of water to a boil.

Step 3

Meanwhile in a large skillet sauté onion in olive oil for 2-3 minutes or until slightly golden in color.

Step 4

Add mushrooms and sauté for 5 minutes, season with salt and pepper.

Step 5

Cook pasta according to package directions and drain.

Step 6

Toss pasta with sauce, spinach and cheese.
