1Box Barilla^® Collezione Penne

1Garlic clove, chopped

4Tabelspoons extra virgin olive oil

1Pound mixed fresh mushrooms [oyster, shitake, domestic, porcini to name a few], sliced

114- ounce can tomatoes, chopped

½Cup Romano Cheese, Grated

1Teaspoon fresh oregano

Method

Step 1

Bring a large pot of water to a boil. Cook pasta according to package directions.

Step 2

Meanwhile sauté olive oil with garlic and pepper flakes for one minute, then add mushrooms and brown over high heat, about 10 minutes.

Step 3

Add tomatoes, season with salt and bring to a simmer.

Step 4

Drain pasta and toss with mushrooms sauce.

Step 5

Stir in cheese and oregano before serving.
