Ingredients

1Box Barilla^® Angel Hair

1/4Cup extra virgin olive oil

2Cups Red Onions Julienne

3Cups Fresh Tomatoes Diced, Peeled, Seeded

2LEAVES Fresh Basil Chopped

1/2Cup Parmigiano-Reggiano Cheese Divided Grated

2Tablespoons butter

Method

Step 1

BRING a large pot of water to a boil.

Step 2

HEAT olive oil in a large skillet.

Step 3

Sauté onions over medium heat for about 10 minutes.

Step 4

ADD tomatoes, basil, and 1 cup of water and simmer.

Step 5

SEASON with salt and pepper to taste, then simmer 5-7 minutes.

Step 6

Set aside.

Step 7

COOK Angel Hair according to package directions.

Step 8

Drain and toss with ½ the sauce and Parmigiano cheese.

Step 9

Adjust seasonings and allow pasta to cool.

Step 10

MELT butter in a non-stick pan.

Step 11

ADD Angel Hair and fry until bottom is golden brown and crispy.

Step 12

Invert onto plate or cutting board.

Step 13

Return pasta to pan to cook other side.

Step 14

Cook until golden brown and crispy on both sides.

Step 15

Invert onto serving platter.

Step 16

POUR reserved sauce over pasta cake and serve.
