In this veggie pasta recipe, roasted red peppers are blended with sherry, broth and heavy cream to create a delicious creamy sauce with a hint of spice. Give it a special touch with Barilla^® Love heart-shaped pasta.

¾Cup of soaked raw cashew nuts, drained, and rinsed

¾Cup of water

2Cloves Garlic

1Small red beet, peeled and cut into 1-inch cubes

1/3Cup dry white wine

2Tablespoons fresh lemon juice

¼Cup Parmigiano-Reggiano cheese, grated

¼Cup Vegetable Broth

2Tablespoons lemon juice

1/4Cup Parmigiano-Reggiano Cheese, Grated, Divided

1/4Cup parsley, chopped

1/4Cup heavy cream

¼Cup Parmigiano-Reggiano cheese, plus more for garnish

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, add onions; cook 7-8 minutes, or until soft. Add garlic, tomato paste, smoked paprika, and chili flakes. Cook 3-5 minutes, stirring occasionally, until the tomato paste turns brick red.

Step 3

Add sherry and broth; stir to release any browned bits stuck to the bottom of the pan. Simmer 3 to 4 minutes, until the liquid slightly reduces. Stir in salt and black pepper.

Step 4

Cook pasta according to package directions. Before draining, reserve 1 cup of pasta cooking water.

Step 5

Transfer sauce mixture to a food processer; add roasted red peppers. Blend until smooth, about 30 to 45 seconds. Transfer sauce back to the skillet; stir in heavy cream.

Step 6

Combine drained pasta and red pepper sauce in skillet over medium-low heat. Stir in reserved pasta cooking water in 1/4 cup increments until desired consistency is achieved.

Step 7

Add basil and sprinkle in cheese, stirring continuously, until combined. Finish with fresh basil leaves.
