1Box Barilla^® Love Heart-shaped Pasta

¾Cup of soaked raw cashew nuts, drained, and rinsed

¾Cup of water

2Cloves Garlic

1Small red beet, peeled and cut into 1-inch cubes

1/3Cup dry white wine

2Tablespoons fresh lemon juice

¼Cup Vegetable Broth

¼Cup Parmigiano-Reggiano cheese, grated

To TasteFresh basil or parsley for garnish

To TasteSalt

Method

Step 1

Soak cashews overnight, or boil for 10 minutes.

Step 2

In a pot of boiling water add beets and cook for about 30 minutes or until tender.

Step 3

In a food processer, combine drained cashews, water, garlic, lemon juice, and salt. Start by adding a few cubes of beets until you get your desired pink color. Blend on high for 2 minutes or until smooth.

Step 4

Bring a large pot of water to a boil; cook pasta according to package directions reserving 1/3 cup of pasta cooking water.

Step 5

Bring a large skillet to medium heat, add pink cream sauce, and bring to a simmer. Add in white wine, pasta cooking water, and broth. Simmer on low until warmed through. Taste and adjust seasoning.

Step 6

Add in pasta and combine until coated. Top with cheese and basil or parsley garnish.
