Ingredients
Serves 8
1 | Box Barilla® Medium Shells |
2 | Tablespoon Extra Virgin olive oil |
¼ | Cup Onion, diced |
2 | Pints Cherry Tomatoes |
3 | Cups Baby Arugula |
½ | Cup chopped hazelnuts, toasted |
¼ | Cup Parmigiano Cheese, shredded |
To taste | Salt and black pepper |

Method
Step 1
Bring a large pot of water to a boil
Step 2
Meanwhile in a large skillet sauté the onions in olive oil until they are translucent and slightly browned
Step 3
In a separate small skillet toast the hazelnuts over medium heat until golden brown and set aside
Step 4
To the onions add the cherry tomatoes and sauté for 1 minute, season with salt and pepper
Step 5
Cook the pasta according to the package directions then drain and toss with the tomatoes
Step 6
Add the arugula and stir to combine, then top with hazelnuts and cheese
