Ingredients
Serves 8
1 | Box Barilla® Penne |
4 | Tablespoons extra virgin olive oil, divided |
2 | Each roasted red bell peppers, diced |
½ | Cup sun dried tomatoes (in oil), chopped |
3 | Cups baby arugula |
2 | Balls Mozzarella (fresh), diced |
To taste | Salt and black pepper |
½ | Lemon juice |
4 | Leaves basil |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Cook pasta 1 minute less than cooking time as indicated on the box.
Step 3
Drain and toss with 1 tbsp olive oil, place on sheet tray to cool down.
Step 4
Once cool, place in a large bowl and add all remaining ingredients.
Step 5
Toss to combine.
