1 | Jar Barilla® Rustic Basil Pesto |
1 | Pound peeled and deveined shrimp |
1 | Box Barilla® Penne |
1 | Zucchini, sliced into thin rounds |
1 | Tablespoon Extra virgin olive oil |
1 | Cup, jarred roasted red sweet peppers, drained and cut into strips |
¼ | Cup grated Parmesan cheese |
8 | Fresh basil, sliced thin |
1 | Yellow squash |

Method
Step 1
Combine the shrimp with ¼ cup pesto; marinate for 20 minutes.
Step 2
Cook pasta according to package directions, drain.
Step 3
In a large skillet, heat olive oil over medium heat; add the shrimp. Cook 4 to 6 minutes, turning halfway through, until opaque. Add drained pasta and squash.
Step 4
Stir in the rest of the pesto, the roasted peppers, and the ¼ cup Parmesan cheese. Stir gently to mix and heat through. Serve topped with fresh basil and Parmesan cheese shards.
