Barilla Red Lentil Spaghetti Mushroom Meatballs Recipe

Ingredients

Serves 4

8 Ounces Barilla® Protein+® Thin Spaghetti Pasta
2 1/2 Tablespoons extra-virgin olive oil, divided
8 Ounces roasted red peppers packed in water, chopped (About 1 cup chopped peppers)
3 Cups packed baby arugula
1/3 Cup packed fresh leaves basil, thinly sliced
½ Teaspoon crushed red pepper (optional)
3 Tablespoons balsamic vinegar
4 Ounces goat cheese, crumbled, divided
To taste Kosher salt and freshly ground black pepper

Method

Step 1

Bring a large pot of water to a boil. Cook pasta according to package directions. Drain and add to a large mixing bowl. Drizzle pasta with 1 tablespoon of olive oil to prevent the pasta from sticking. Set aside to let pasta cool to room temperature.

Step 2

To the bowl with pasta, add roasted red peppers, arugula, basil, and crushed red pepper (optional).

Step 3

Drizzle with remaining olive oil and the vinegar; toss to combine.

Step 4

Add half of the goat cheese and gently toss again. Taste and season with a little extra salt and pepper if needed.

Step 5

Serve immediately topped with the remaining goat cheese.
