1 | Pound Chicken Thighs, Diced |
1 | Teaspoon Cumin |
2 | Cloves Garlic, Minced |
1 | Yellow Onion, Small Dice |
1 | Cup Asparagus, Sliced on The Bias |
2 | Chipotle Peppers, Diced |
1 | Tablespoon Chipotle Sauce, Canned |
½ | Cup Parmigiano-Reggiano Cheese, Grated |
1 | Cup Heavy Cream |
To Taste | Sea Salt and Black Pepper |

Method
Step 1
Bring a large pot of water to a boil. Cook pasta according to package directions.
Step 2
Meanwhile, season chicken thighs with 1 tablespoon olive oil, cumin, salt, and pepper.
Step 3
Cook thighs for 3-4 minutes in a skillet on high heat. Remove chicken and set aside.
Step 4
Add remaining olive oil to the skillet with onion and garlic. Sauté for 2-3 minutes or until translucent.
Step 5
Add asparagus, cooking for an additional 30 seconds. Add chipotle peppers, sauce, and heavy cream.
Step 6
Return chicken to skillet with pasta. Toss with cheese.
