Barilla Protein Pasta Kale Lemon Chili Pasta

Ingredients

Serves 7

1 Box Barilla® Protein+™ Elbows
2 Cups plum tomatoes, diced
3 Cups avocados, diced
2 ½ Cups fresh mozzarella cheese, cubed
To Taste Salt
To Taste Black pepper freshly ground to taste
½ Cup fresh basil, torn
1/3 Cup extra virgin olive oil

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Combine tomatoes, avocados, mozzarella, basil, and olive oil in a large bowl.

Step 3

Season with salt and pepper.

Step 4

Let mixture marinate for 20-30 minutes.

Step 5

Cook pasta 1 minute less than recommended package cooking time.

Step 6

Drain and pour onto a flat surface.

Step 7

Drizzle with a small amount of oil and let cool.

Step 8

Add cooled pasta to ingredients in bowl.

Step 9

Toss and serve.
