Ingredients
Serves 7
1 | Box Barilla® Protein+™ Rotini |
¼ | Cup extra virgin olive oil |
8 | Ounces Skin-on Salmon Filet |
½ | Cup Scallion sliced |
1 | Pound Asparagus chopped |
2 | Cups cherry tomatoes halved |
½ | Fresh Lemons juiced |
2 | Tablespoons Fresh Tarragon chopped |
To taste | Salt |
To taste | Black pepper freshly ground |

Method
Step 1
Bring a large pot and a small pot of water to boil.
Step 2
Add salmon to the small pot of water, simmer on low 6 to 7 minutes until cooked through, do not boil.
Step 3
When cooked, remove and let cool.
Step 4
When cool, remove skin and set aside.
Step 5
Heat olive oil in a large skillet.
Step 6
Add scallions and cherry tomatoes, sauté 2-3 minutes.
Step 7
Juice lemons to yield 3 tablespoons lemon juice.
Step 8
Add lemon juice.
Step 9
Season with salt and pepper to taste, set aside.
Step 10
Cook pasta according to package directions.
Step 11
During last 2 minutes of cook time, add asparagus.
Step 12
Drain and immediately add to sauce.
Step 13
Add tarragon, mix well.
