Barilla® Protein+™ Rotini with Asparagus, Salmon & Cherry Tomatoes

Ingredients

Serves 7

1 Box Barilla® Protein+™ Rotini
¼ Cup extra virgin olive oil
8 Ounces Skin-on Salmon Filet
½ Cup Scallion sliced
1 Pound Asparagus chopped
2 Cups cherry tomatoes halved
½ Fresh Lemons juiced
2 Tablespoons Fresh Tarragon chopped
To taste Salt
To taste Black pepper freshly ground

Method

Step 1

Bring a large pot and a small pot of water to boil.

Step 2

Add salmon to the small pot of water, simmer on low 6 to 7 minutes until cooked through, do not boil.

Step 3

When cooked, remove and let cool.

Step 4

When cool, remove skin and set aside.

Step 5

Heat olive oil in a large skillet.

Step 6

Add scallions and cherry tomatoes, sauté 2-3 minutes.

Step 7

Juice lemons to yield 3 tablespoons lemon juice.

Step 8

Add lemon juice.

Step 9

Season with salt and pepper to taste, set aside.

Step 10

Cook pasta according to package directions.

Step 11

During last 2 minutes of cook time, add asparagus.

Step 12

Drain and immediately add to sauce.

Step 13

Add tarragon, mix well.
