Ingredients

Serves 7

1 Box Barilla® Protein+™ Spaghetti
1/3 Cup Extra Virgin Olive Oil
1 Clove Garlic
2 Medium Eggplants Diced
¼ Cup Flour
½ Cup Kalamata Pitted Olive Halved
2 Pints Cherry Tomatoes Halved
½ Cup Pecorino Cheese Grated
6 Leaves Fresh Basil Sliced Very Thin

Method

Step 1

Sprinkle eggplant with salt in colander.

Step 2

Set aside to drain for 1 hour.

Step 3

Bring a large pot of water to a boil.

Step 4

Heat olive oil in a large skillet.

Step 5

Press the garlic clove with the flat of a knife.

Step 6

Add to skillet and sauté for 1 minute.

Step 7

Sprinkle eggplants with flour.

Step 8

Add to skillet and cook until tender.

Step 9

Stir in tomatoes and olives.

Step 10

Cook 2 more minutes

Step 11

Cook pasta according to package directions.

Step 12

Drain.

Step 13

Combine pasta with sauce and mix well.

Step 14

Add cheese and basil.
