Pasta Salad with Chicken, Bacon & Veggies
Ingredients
Serves 6
| 1 | Box Barilla® Racing Wheels |
| 4 | Tablespoons Extra Virgin Olive Oil, Divided |
| 1 | Fresh Lemon |
| 2 | Cups Frozen Peas |
| 1 | Pound Boneless Skinless Chicken Breast, Diced |
| 5 | Slices Bacon, Cut Into Strips |
| 2 | Cups Cherry Tomatoes, Halved |
| 1 | Cup Fresh Mozzarella Cheese, Cubed (May Substitute Shredded Mozzarella Cheese) |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Cook Racing Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil.
Step 3
Spread pasta on a cookie sheet or baking tray to cool.
Step 4
Juice lemon to yield 2 tablespoons lemon juice.
Step 5
Bring a medium pot of salted water to a boil.
Step 6
Add peas and boil for 5 minutes; drain and cool.
Step 7
Heat a medium skillet over medium heat.
Step 8
Add remaining oil and chicken.
Step 9
Cook for 4-5 minutes or until cooked through; season with salt and pepper.
Step 10
Allow chicken to cool.
Step 11
Cook bacon in same skillet until crispy; drain fat and allow to cool.
Step 12
Combine all ingredients and allow to rest 30 minutes before serving.
