Ingredients
Serves 8
1 | Box Barilla® Rigatoni |
6 | Tablespoons extra virgin olive oil |
2 | Tablespoons red wine vinegar |
To taste | Salt and fresh ground pepper |
4 | Cups packed mixed lettuce, pre-washed |
½ | Cup sun-dried tomato |
5 | Oz. Blue cheese, crumbled |
1 | Cup walnuts, roasted and crushed |

Method
Step 1
Combine oil and vinegar using a bowl.
Step 2
Add salt and pepper to taste.
Step 3
Cook pasta according to the package directions.
Step 4
Drain and toss with 1 tablespoon olive oil; place on sheet tray to cool down.
Step 5
Combine the lettuce leaves with the pasta, the tomatoes and the dressing, using a large bowl.
Step 6
Sprinkle with the cheese and roasted nuts and serve.
