Mushroom Rigatoni Pasta Recipe with Marinara
This easy rigatoni recipe calls for marinara sauce, rich ricotta cheese, and, perhaps most importantly, sliced button mushrooms. The combination of textures from al dente rigatoni and sautéed mushrooms makes this pasta recipe one for the ages. Ingredients
Serves 8
| 1 | Box Barilla® Rigatoni |
| 1 | Jar Barilla® Marinara Sauce |
| 4 | Tablespoons extra virgin olive oil |
| 1 | Small shallot, chopped |
| 3 | Cups button mushrooms, sliced |
| 15 | Ounces ricotta cheese |
| 6 | leaves fresh basil, chopped |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Heat olive oil in a large skillet over medium high heat.
Step 3
Add shallots and sauté for 5 minutes or until translucent.
Step 4
Add mushrooms and cook an additional 3 to 4 minutes.
Step 5
Add Marinara pasta sauce and ricotta cheese to skillet.
Step 6
Simmer for 4 minutes and set aside.
Step 7
Cook Rigatoni according to package directions.
Step 8
Drain rigatoni pasta; add to hot pasta sauce and toss.
Step 9
Transfer to a serving platter or bowl.
Step 10
Garnish with chopped basil and serve.
