An easy way to cook with squid ink is to let it come to a simmer within your pasta mixture. Fold the blistered orange cherry tomatoes in with your squid ink pasta and top with some shredded parmesan. | 4 | Tablespoons Extra Virgin Olive Oil, Divided |
| 1 | Pint Orange Grape Tomatoes |
| 2 | Cloves of Garlic, Minced |
| ½ | Cup Dry White Wine |
| 2 | Tablespoons Squid Ink |
| 1 | Tablespoon Italian Parsley, Chopped |
| 3 | Tablespoons Shredded Parmesan Cheese |

Method
Step 1
Cook pasta according to package directions and drain.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over medium/high heat until it shimmers. Add the tomatoes and let cook until blistered and browned. Set tomatoes aside.
Step 3
Return the skillet to the heat, add remaining olive oil and sauté garlic for 1 minute. Add parsley and white wine. Let it simmer until it is reduced by half.
Step 4
Add squid ink to the mixture, add pasta and toss with the sauce.
Step 5
Remove from heat and top with blistered tomatoes.
Step 6
Garnish with parmesan cheese before serving.
