Ingredients

Serves 6

1 Package Barilla® Three Cheese Tortellini
2 tbs. Extra Virgin Olive Oil
1/2 Cup Onion Diced
2 Cups Zucchini Diced
1/8 tsp. Black Pepper Freshly Ground
1 Cup Roasted Red Pepper Sliced
9 oz. Fresh Baby Spinach
1 Cup Fresh Tomato Diced

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Cook Three Cheese Tortellini according to package directions.

Step 3

Meanwhile, sauté onions in oil in a large skillet over medium heat for 5 minutes.

Step 4

Add zucchini and black pepper, cook for 3 minutes.

Step 5

Season with salt.

Step 6

Add red peppers and baby spinach and sauté for 1 additional minute.

Step 7

Drain Three Cheese Tortellini and mix with sauce in skillet.

Step 8

Stir in tomatoes and serve.
