| 2 | tbs. Extra Virgin Olive Oil |
| 1/2 | Cup Onion Diced |
| 2 | Cups Zucchini Diced |
| 1/8 | tsp. Black Pepper Freshly Ground |
| 1 | Cup Roasted Red Pepper Sliced |
| 9 | oz. Fresh Baby Spinach |
| 1 | Cup Fresh Tomato Diced |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Cook Three Cheese Tortellini according to package directions.
Step 3
Meanwhile, sauté onions in oil in a large skillet over medium heat for 5 minutes.

Add zucchini and black pepper, cook for 3 minutes.
Step 5
Season with salt.
