Ingredients

Serves 6

1 Box Barilla® Three Cheese Tortellini - Family Size
½ Bunch asparagus
½ Cup scallion, white part only
3 Tablespoons extra virgin olive oil
1 Small zucchini diced, seeded
2 Plum tomatoes blanched, peeled, diced
½ Cup Parmigiano-Reggiano cheese, grated

Method

Step 1

Bring a large pot of water to a boil.

Step 2

Remove the asparagus tips and cut the remaining part into ¼ inch long pieces.

Step 3

Slice scallions into small rings.

Step 4

Sauté the scallions, zucchini and asparagus in olive oil in a medium skillet over medium heat for about 8 minutes.

Step 5

Add tomatoes and sauté for 2 more minutes.

Step 6

Season with salt and pepper.

Step 7

Cook Three Cheese Tortellini according to package directions.

Step 8

Drain and add to the vegetable sauce.

Step 9

Sprinkle with cheese and serve.
