Ingredients
Serves 6
1 | Box Barilla® Three Cheese Tortellini - Family Size |
½ | Bunch asparagus |
½ | Cup scallion, white part only |
3 | Tablespoons extra virgin olive oil |
1 | Small zucchini diced, seeded |
2 | Plum tomatoes blanched, peeled, diced |
½ | Cup Parmigiano-Reggiano cheese, grated |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Remove the asparagus tips and cut the remaining part into ¼ inch long pieces.
Step 3
Slice scallions into small rings.
Step 4
Sauté the scallions, zucchini and asparagus in olive oil in a medium skillet over medium heat for about 8 minutes.
Step 5
Add tomatoes and sauté for 2 more minutes.
Step 6
Season with salt and pepper.
Step 7
Cook Three Cheese Tortellini according to package directions.
Step 8
Drain and add to the vegetable sauce.
Step 9
Sprinkle with cheese and serve.
