Ingredients
Serves 8
1 | Box Barilla Whole Grain Spaghetti |
4 | Tablespoons Extra Virgin Olive Oil |
1 | Clove Garlic chopped |
1 | Jar Roasted Red Peppers, sliced thin |
3 | Zucchini sliced half moon |
To taste | Salt and Pepper |
1 | Tablespoon Parsley, chopped |
1/2 | Cup Pecorino cheese, grated |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
Meanwhile in a skillet sauté garlic in olive oil for 1 - 2 minutes or until lightly golden in color.
Step 3
Add zucchini and sauté over medium heat 4 - 5 minutes.
Step 4
Add peppers and sauté an additional minute then season with salt and pepper.
Step 5
Cook Spaghetti according to package directions, once pasta is almost cooked reserve 1/2 cup of the cooking water.
Step 6
Add the cooking water to the sauce and bring to a simmer.
Step 7
Drain the pasta and sauté with the sauce for 1 minute or until well incorporated.
