6½-Inch slices of rustic Italian bread

1Tablespoons olive oil

1Cup Burrata or Ricotta cheese

Freshly grated lemon zest from ½ of a lemon

½Cup halved multicolor cherry tomatoes

8Basil leaves; sliced thin

Method

Step 1

Brush the bread slices with olive oil. Place on a baking sheet and under the broiler for about a minute on each side or until very lightly browned. Remove from oven and let cool slightly.

Step 2

Combine the burrata with lemon zest.

Step 3

Spread burrata over bread slices.

Step 4

Top with pesto then cucumbers and cherry tomatoes. Season with salt to taste and garnish with fresh basil.
