Ingredients
Serves 6
1 | Box Barilla® Collezione Casarecce |
4 | Tablespoons extra virgin olive oil, divided |
1 | Medium yellow onion, julienne |
1 | Acorn squash, diced |
8 | oz. shitake mushrooms, julienne |
1 | Tablespoon Italian parsley |
To taste | Salt and pepper |
½ | Cup Parmigiano, shredded |

Method
Step 1
Turn on oven to 400°F, season squash with 2 tbs extra virgin olive oil, salt and pepper and roast in the oven until slightly caramelized, about twenty minutes, set aside.
Step 2
At the same time in a skillet cook onion gently over medium heat with remaining oil until slightly caramelized, about fifteen minutes. Add sliced mushroom and cook another five minutes over high heat, season with salt and pepper.
Step 3
Place a pot of water to boil, cook pasta according to directions.
Step 4
Drain pasta and toss with mushrooms mixture and roasted squash. Stir in parsley and cheese before serving.
