One Pan Rosemary Chicken Cellentani Pasta with Cheese

2 | Cups Barilla® Cellentani pasta (about ½ the box) |
2 | Tablespoons Barilla® Rustic Basil Pesto |
3 | Tablespoons extra virgin olive oil |
2 | Tablespoons fresh rosemary, finely chopped |
1 | Clove garlic, minced |
¼ | Cup panko or plain breadcrumbs |
2 | Cups reduced-sodium chicken broth |
1 | Cup whole milk |
2 | Ounces goat cheese, crumbled |
2 | Ounces mozzarella cheese, shredded (optional) |
2 | Cups baby spinach, chopped |
2 | Cups cooked rotisserie chicken meat, pulled |

Method
Step 1
In a small bowl, combine olive oil, rosemary, garlic, and pesto.
Step 2
Transfer half of the mixture to a Dutch oven or large skillet and set aside the remaining mixture.
Step 3
Add breadcrumbs to the Dutch oven. Toast over medium heat, stirring often until golden brown. Transfer the toasted crumbs to a small bowl and set aside.
Step 4
Add chicken broth and milk to the Dutch oven. Bring to a boil. Stir in pasta, then reduce heat to medium low. Cook for 10-12 minutes or until pasta is al dente and liquid has thickened slightly.
Step 5
Stir in goat cheese, mozzarella (optional), spinach and the reserved basil rosemary mixture. -Reduce heat to low. Stir often until the mixture is creamy. Fold in chicken. Cook on low until the chicken is heated through.
Step 6
Spoon mixture into shallow bowls or plates. Sprinkle toasted breadcrumbs over pasta and serve.
