One Pan Rosemary Chicken Cellentani Pasta with Cheese

Barilla Red Lentil Penne Pasta Baked Chicken Pasta

Ingredients

Serves 4

2 Cups Barilla® Cellentani pasta (about ½ the box)
2 Tablespoons Barilla® Rustic Basil Pesto
3 Tablespoons extra virgin olive oil
2 Tablespoons fresh rosemary, finely chopped
1 Clove garlic, minced
¼ Cup panko or plain breadcrumbs
2 Cups reduced-sodium chicken broth
1 Cup whole milk
2 Ounces goat cheese, crumbled
2 Ounces mozzarella cheese, shredded (optional)
2 Cups baby spinach, chopped
2 Cups cooked rotisserie chicken meat, pulled

Method

Step 1

In a small bowl, combine olive oil, rosemary, garlic, and pesto.

Step 2

Transfer half of the mixture to a Dutch oven or large skillet and set aside the remaining mixture.

Step 3

Add breadcrumbs to the Dutch oven. Toast over medium heat, stirring often until golden brown. Transfer the toasted crumbs to a small bowl and set aside.

Step 4

Add chicken broth and milk to the Dutch oven. Bring to a boil. Stir in pasta, then reduce heat to medium low. Cook for 10-12 minutes or until pasta is al dente and liquid has thickened slightly.

Step 5

Stir in goat cheese, mozzarella (optional), spinach and the reserved basil rosemary mixture. -Reduce heat to low. Stir often until the mixture is creamy. Fold in chicken. Cook on low until the chicken is heated through.

Step 6

Spoon mixture into shallow bowls or plates. Sprinkle toasted breadcrumbs over pasta and serve.
