1Cup 2% cottage cheese

½Teaspoon salt

¼Teaspoon Black pepper

10Large fresh basil leaves and additional leaves for garnish

2Cloves Garlic

2Teaspoons lemon juice

ZestOne small-medium lemon

2Large russet potatoes, peeled

1 ½Tablespoons olive oil

1 ½Teaspoons Salt

Method

Step 1

Pre-heat oven to 425° F.

Step 2

Cut potatoes into desired size of fries and soak in cold water for 20 minutes.

Step 3

Remove from water and dry well. Toss with olive oil and salt; place on a large parchment-lined baking sheet.

Step 4

Bake for 20 minutes, toss fries, and roast for an additional 15-20 minutes or until golden.

Step 5

Meanwhile, add all dip ingredients into a large food processor or high-speed blender and blend until smooth, scraping down the sides of the processor or blender as needed. Adjust flavors to desired taste with more salt, pepper, or pesto.

Step 6

Place dip in a bowl and garnish with pesto leaves. Serve with hot fries and enjoy!

Step 7

Store dip in an airtight container in the fridge for about 3 days.
