1 | Jar Barilla® Vegan Pesto |
1 | Tablespoon Extra-virgin olive oil |
1 | 1 Pint grape tomatoes |
2 | Cups fresh arugula |
To taste | Salt & Black Pepper |

Method
Step 1
Preheat oven to 425° F.
Step 2
Bring a large pot of salted water to a boil and cook pasta according to package directions; reserve ½ cup of pasta cooking water.
Step 3
Meanwhile, season tomatoes with olive oil, salt, and pepper. Place on a baking sheet and roast in the oven until blistered & slightly browned; about 12 minutes.
Step 4
While the tomatoes are roasting, whisk together pasta cooking water with vegan pesto.
Step 5
Toss pasta with pesto, blistered tomatoes, and fresh arugula. Enjoy!
