Ingredients
Serves 4
1/2 | Box Barilla® Gemelli |
2 | Tablespoons pine nuts |
2 | Tablespoons extra virgin olive oil |
1 | Clove garlic, minced |
1 | Medium zucchini, julienne |
2 | Medium carrots, julienne |
1/2 | Cup Parmigiano-Reggiano cheese, freshly grated |
1/2 | Teaspoon salt |
1/8 | Teaspoon black pepper, freshly ground |

Method
Step 1
Bring a large pot of water to a boil.
Step 2
toast pine nuts in a large skillet over medium heat 4 to 5 minutes or until golden brown.
Step 3
Remove from skillet set aside.
Step 4
Heat oil in skillet over medium-high heat.
Step 5
Stir in garlic cook 30 seconds.
Step 6
Add zucchini and carrots sauté 6 to 7 minutes or until crisp-tender.
Step 7
Stir in pine nuts remove from heat.
Step 8
Meanwhile, cook Gemelli according to package directions drain and return to pot.
Step 9
Add cooked vegetable mixture and remaining ingredients to hot gemelli toss.
Step 10
Transfer to serving platter.
