| 1 | Baguette, halved |
| 2 | Tablespoons extra virgin olive oil |
| 3 | Heirloom tomatoes, sliced thin |
| 1 ½ | Cups arugula |
| 2 | Cups fresh Mozzarella (one 8-oz ball) |
| 1 | Tablespoon balsamic glaze |

Method
Step 1
Preheat oven to 425° F. Drizzle baguette with olive oil and place in the oven to toast for 4-5 min.
Step 2
Spread pesto on top and bottom of baguette. Arrange the bottom of baguette with tomatoes, arugula, mozzarella, and a drizzle of balsamic glaze. Cover with top of baguette. Cut into four equal sandwiches.
