Ingredients

1 | Box Barilla® Rigatoni pasta |
4 | Medium sweet onions, divided (3 3⁄4 onion sliced, 1⁄4 onion grated) |
1 | Small yellow onion, chopped |
3 | Tablespoons salted butter |
2 | Tablespoons cooking oil |
1 | Tablespoon sugar |
3 | Cloves garlic, minced |
9 | Sprigs thyme, divided (1 Tablespoon thyme leaves, plus additional sprigs for garnish) |
4 | Tablespoons all-purpose flour |
1/3 | Cup Vermouth |
3 | Cups beef stock |
1 | Tablespoon beef bouillon |
1/3 | Cup Chardonnay wine |
1 | Tablespoon Worcestershire sauce |
9 | Ounces Swiss cheese, shredded & divided (reserving 2 oz. for topping) |
1 | Ounce Parmigiano-Reggiano cheese, grated & halved |
1/3 | Cup heavy cream |
To Taste | Salt & black pepper |

Method
Step 1
In a large, oven-safe pot, heat cooking oil and butter over medium-low heat.
Step 2
Add halved and sliced onions, a generous pinch of salt and stir; cook covered on low for 20 minutes.
Step 3
Increase heat to medium-low, uncover; add sugar and salt to taste, stirring frequently until onions are golden brown, about 20 additional minutes.
Step 4
Add garlic and thyme leaves, cook until fragrant.
Step 5
Stir in flour, and cook for 2 minutes or until thickened.
Step 6
Deglaze with Vermouth, scraping up brown bits at the bottom of the pot.
Step 7
Add beef stock, beef bouillon, Chardonnay, Worcestershire sauce and grated onion.
Step 8
Bring to a boil, add uncooked pasta and cook covered, stirring occasionally, for 11 minutes.
Step 9
Turn off heat, then stir in Swiss cheese, half the Parmigiano-Reggiano, and heavy cream until combined; season to taste with salt and pepper.
Step 10
Sprinkle reserved Swiss cheese and other half of Parmigiano-Reggiano cheese on top, and put pot with lid on under the broiler for 1-2 min until the cheese is melted and browned.
Step 11
Garnish with a sprig of thyme per serving.
