| 4 | Ounces cream cheese, softened |
| 2 | Cups acorn squash, peeled and cubed |
| 2 | Tablespoons extra virgin olive oil |
| 1 | Tablespoon dried parsley flakes |
| 1 | teaspoon nutmeg |
| ¼ | teaspoon cumin powder |
| 1 | cup pasta cooking water |
| 1 | Cup milk |
| To Taste | Salt and black pepper |

Method
Step 1
Preheat oven to 350° F.
Step 2
Bring a large pot of water to a boil. Cook pasta according to package directions. Before draining reserve one cup of pasta cooking water.
Step 3
Meanwhile, toss the squash cubes with olive oil, season with salt and pepper and evenly spread on a sheet tray. Bake until the squash is fork-tender, about 25 minutes.
Step 4
In a food processor blend the baked squash, pasta water, milk, and cream cheese.
Step 5
Pour the mixture into large bowl, season with nutmeg, cumin, and dried parsley flakes. Add in the tortellini and gently stir to combine.
