Ingredients

Serves 2

1 pouch Barilla® Ready Pasta Gemelli
2 Tablespoons Extra Virgin Olive Oil
1 Cup Small or Medium Shrimp, Peeled and Deveined
½ Cup Zucchini, Halved and Sliced
½ Cup Yellow Squash, Halved and Sliced
2 Cups Grape Tomatoes, Halved
¼ Cup Parmesan Cheese, Grated
To Taste Salt and Pepper

Method

Step 1

In a large skillet, heat the olive oil over medium-high heat, then add the shrimp, zucchini, and yellow squash. Sauté for 1-2 minutes.

Step 2

Add the tomatoes and season with salt and pepper, to taste. Cook for one additional minute.

Step 3

Tear corner of Ready Pasta pouch to vent, heat in microwave for 60 seconds.

Step 4

Combine Ready Pasta with the shrimp and veggies. Top with cheese, if desired. Serve and enjoy!
