2 | Tablespoons Extra Virgin Olive Oil |
1 | Cup Small or Medium Shrimp, Peeled and Deveined |
½ | Cup Zucchini, Halved and Sliced |
½ | Cup Yellow Squash, Halved and Sliced |
2 | Cups Grape Tomatoes, Halved |
¼ | Cup Parmesan Cheese, Grated |
To Taste | Salt and Pepper |

Method
Step 1
In a large skillet, heat the olive oil over medium-high heat, then add the shrimp, zucchini, and yellow squash. Sauté for 1-2 minutes.
Step 2
Add the tomatoes and season with salt and pepper, to taste. Cook for one additional minute.
Step 3

Step 4
