Barilla® Gemelli

with Vegetables and Parmigiano

Ingredients for 4 people 

  • 1/2 box Barilla Gemelli
  • 2 tablespoons Pine Nuts
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic Minced
  • 1 Medium Zucchini Julienne
  • 2 Medium Carrots Julienne
  • 1/2 cup Parmigiano Reggiano Cheese Freshly Grated
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Black Pepper Freshly Ground

     Bring a large pot of water to a boil

     toast pine nuts in a large skillet over medium heat 4 to 5 minutes or until golden brown

    Remove from skillet set aside

    Heat oil in skillet over medium-high heat
  5. 5
    Stir in garlic cook 30 seconds
  6. 6
    Add zucchini and carrots sauté 6 to 7 minutes or until crisp-tender

    Stir in pine nuts remove from heat
  8. 8
    Meanwhile, cook Gemelli according to package directions drain and return to pot

    Add cooked vegetable mixture and remaining ingredients to hot gemelli toss

    Transfer to serving platter
