Ingredients for 6 people

  • 1 Box Barilla® Three Cheese Tortellini - Family Size
  • ½ bunch asparagus
  • ½ cup scallion, white part only
  • 3 tablespoons extra virgin olive oil
  • 1 small zucchini diced, seeded
  • 2 plum tomatoes blanched, peeled, diced
  • ½ cup Parmigiano-Reggiano cheese, grated

Instructions

  • Bring a large pot of water to a boil
  • Remove the asparagus tips and cut the remaining part into ¼ inch long pieces
  • Slice scallions into small rings
  • Sauté the scallions, zucchini and asparagus in olive oil in a medium skillet over medium heat for about 8 minutes
  • Add tomatoes and sauté for 2 more minutes
  • Season with salt and pepper
  • Cook Three Cheese Tortellini according to package directions
  • Drain and add to the vegetable sauce
  • Sprinkle with cheese and serve
