Ingredients for 7 people    

  • 1 Box Barilla® Protein+™ Penne
  • 1/2 Cup Extra Virgin Olive Oil Divided
  • 4 Portobello Mushrooms
  • 4 Cloves Garlic
  • 4 Red Bell Peppers
  • 1/2 Cup Black Olives Coarsely Chopped
  • 1/4 Cup Romano Cheese Grated

Instructions

  • Bring a large pot of water to a boil
  • Cook pasta according to package directions
  • Drain and cool pasta down on a flat sheet pan in the refrigerator
  • Drizzle Penne with a small amount of olive oil to prevent sticking
  • Clean bristles off portobello mushrooms (inside the cap) and discard stems
  • Marinate in olive oil, salt, pepper and garlic
  • Place on sheet pan
  • Roast mushrooms in a preheated 400°F oven for about 15 minutes
  • Allow to cool
  • Cut into thin julienne slices
  • Roast Peppers over an open flame until almost completely charred
  • Transfer to a plastic bag
  • Allow peppers to cool, then peel and seed
  • Cut into thin julienne pieces
  • Transfer cooled Penne to a large bowl
  • Combine Penne with olives, peppers, mushrooms and grated cheese
  • Mix well and serve chilled or room temperature
