Barilla® ProteinPLUS® Penne Salad

with Roasted Portobello Mushrooms, Red Peppers, Black Olives & Romano Cheese



Ingredients for 7 people    

  • 1 Box Barilla® ProteinPLUS® Penne
  • 1/2 Cup Extra Virgin Olive Oil Divided
  • 4 Portobello Mushrooms
  • 4 Cloves Garlic
  • 4 Red Bell Peppers
  • 1/2 Cup Black Olives Coarsely Chopped
  • 1/4 Cup Romano Cheese Grated

    Bring a large pot of water to a boil

    Cook pasta according to package directions
  3. 3
    Drain and cool pasta down on a flat sheet pan in the refrigerator
  4. 4
    Drizzle Penne with a small amount of olive oil to prevent sticking
  5. 5
    Clean bristles off portobello mushrooms (inside the cap) and discard stems
  6. 6
    Marinate in olive oil, salt, pepper and garlic
  7. 7
    Place on sheet pan
  8. 8
    Roast mushrooms in a preheated 400°F oven for about 15 minutes

    Allow to cool

    Cut into thin julienne slices

    Roast Peppers over an open flame until almost completely charred

    Transfer to a plastic bag

    Allow peppers to cool, then peel and seed

    Cut into thin julienne pieces

    Transfer cooled Penne to a large bowl

    Combine Penne with olives, peppers, mushrooms and grated cheese

    Mix well and serve chilled or room temperature
