- 1 Box Barilla® Protein+™ Penne
- 1/2 Cup Extra Virgin Olive Oil Divided
- 4 Portobello Mushrooms
- 4 Cloves Garlic
- 4 Red Bell Peppers
- 1/2 Cup Black Olives Coarsely Chopped
- 1/4 Cup Romano Cheese Grated

Bring a large pot of water to a boil
- Cook pasta according to package directions

Drain and cool pasta down on a flat sheet pan in the refrigerator
- Drizzle Penne with a small amount of olive oil to prevent sticking

Clean bristles off portobello mushrooms (inside the cap) and discard stems

Marinate in olive oil, salt, pepper and garlic
- Place on sheet pan

Roast mushrooms in a preheated 400°F oven for about 15 minutes

Allow to cool
- Cut into thin julienne slices

Roast Peppers over an open flame until almost completely charred
- Transfer to a plastic bag
- Allow peppers to cool, then peel and seed

Cut into thin julienne pieces
- Transfer cooled Penne to a large bowl

Combine Penne with olives, peppers, mushrooms and grated cheese

Mix well and serve chilled or room temperature
