Mason Jar Mexican Pasta Salad

with Ready Pasta Elbows

Ingredients for 4 servings

  • 1 pouch Barilla® Ready Pasta Elbows
  • ½ can black beans, drained
  • 2 ripe plum tomatoes, diced
  • 1 avocados, diced
  • 1 lime juiced
  • ½ cup cotija cheese, shredded
  • ½ cup tortilla chips, roughly chopped
  • 2 tablespoons avocado oil (or extra virgin olive oil)

    Sauté veggies in 2 tablespoons olive oil until slightly browned.

    Tear corner of Ready Pasta pouch to vent, heat in microwave for 60 seconds.
  3. 3
    Toss pasta, veggies, basil and cheese in a bowl.
