Mason Jar Mexican Pasta Salad
with Ready Pasta Elbows
Ingredients for 4 servings
- 1 pouch Barilla® Ready Pasta Elbows
- ½ can black beans, drained
- 2 ripe plum tomatoes, diced
- 1 avocados, diced
- 1 lime juiced
- ½ cup cotija cheese, shredded
- ½ cup tortilla chips, roughly chopped
- 2 tablespoons avocado oil (or extra virgin olive oil)
1Sauté veggies in 2 tablespoons olive oil until slightly browned.
2Tear corner of Ready Pasta pouch to vent, heat in microwave for 60 seconds.
3Toss pasta, veggies, basil and cheese in a bowl.
