LINGUINE WITH PESTO ALLA GENOVESE, POTATO AND GREEN BEANS

A fresh and tasty meal, al dente Linguine, green beans, potatoes and delicious Pesto alla Genovese.
Ingredients
Serves 4
340gr Barilla Linguine | |
½ jar | Barilla Pesto alla Genovese |
100g | potatoes, peeled and diced into cubes |
150gr green beans, sliced into small | pieces |
To taste | Sea salt and pepper |
Rock salt, for cooking water |

Method
Step 1
Bring a large pot of water to the boil and add salt. Drop the Linguine into the boiling water and cook as per instructions on the box. Four or five minutes before draining the pasta, add the green beans and potatoes into the pasta water.
Step 2
Once ready, drain pasta and vegetables into a large mixing bowl, reserving a little of the pasta water. Add the Pesto Genovese and a little of the cooking water as required and mix until everything is evenly coated in Pesto.
Step 3
Serve with a drizzle of olive oil over the top, add a garnish of fresh basil for an extra pop of flavour.
