Ingredients

320 g Cuori Pasta
1 ripe mango
2 ripe tomatoes
60g black fish roe
16 watercress leaves
40 ml Extra virgin olive oil (EVOO)
to taste Salt, pepper

Method

Step 1

Peel and cut the mango and oranges into pieces. Wash and quarter the tomatoes.

Step 2

Blend with a drizzle of olive oil, salt, and pepper, then strain it to obtain a smooth mixture.

Step 3

Cook the pasta in boiling salted water until "al dente".

Step 4

Once the pasta is cooked, drain it in a bowl and add a drizzle of olive oil.

Step 5

Season the pasta, plate and garnish with fish roe and watercress leaves.

Tip

You can substitute the fish roe with bottarga.
